Wholesome Vegan Truffles

These yummy little balls of goodness are so easy and fun to make. I made this batch for our recent Yoga and Manifestation Retreat. Some of them we had as a evening sweet treat with a cup of chai and the rest I wrapped up and presented them as a farewell departing gift.

They are healthy, vegan and so delicious. The recipe below is a starting point but you can certainly play around with the recipe and make your own version. The basics are: some sort of dried fruit, a grain ( flour or oats), flavouring (cacao, carob, honey, agave, coffee) and a oil (coconut oil or a nut butter).

Vegan healthy truffles

Recipe for 12 balls ( depending what size you make) Ingredients: ¾ cup soft pitted dates ¼ cup strong coffee/espresso 1-2 tbsp cacao powder 1 tbsp coconut oil 5 tbsp oat flour A pinch of Himalayan salt

Pop all ingredients into food processor, blitz up, roll into balls. Trouble shoot- too wet and soggy add more flour. Too dry, add a little more coconut oil.

For our retreat I did a bigger batch and then experimented with ingredients. So the first batch was this exact recipe, and I rolled the balls in chai seeds. Then I added in coconut flour, raw peanut butter, goji berries, buckwheat grouts to add variety for the truffles on offer.

Different things you can roll your truffles in: desiccated coconut, cocoa powder, rose petals.

Have fun creating and please do share your own creations, I'd love to know how you get on!
